Spelt Jujube Tonic-Porridge

Ingredients:

  • 1/2 cup spelt flakes
  • 1 1/2 cups water
  • 2-3 dried dates, chopped (add at the beginning or end)
  • 2-3 dried jujubes, sliced (remove seeds if needed)
  • 1-2 tablespoons goji berries
  • A pinch of salt (optional)
  • Sweetener (optional, if additional sweetness is desired)

Instructions:

  1. Cook Spelt Flakes: In a saucepan, combine spelt flakes and water. Bring to a boil and reduce to a simmer. Cook for 10 minutes, stirring occasionally. Add additional water if neeced.

  2. Add Dates: Add chopped dates either at the beginning (for a sweeter, more dissolved texture) or toward the end (to keep chunks intact). If adding at the beginning, allow the dates to simmer with the spelt flakes to dissolve partially.

  3. Add Jujubes and Goji Berries: During the last 3 minutes of cooking, stir in the sliced jujubes and goji berries. These ingredients cook quickly and don’t need as much time, helping them maintain their shape.

  4. Finish and Serve: Once the porridge has reached your desired thickness, remove from heat. Sweeten if needed, and serve with any additional toppings.

Note: As far as alkaline vegan meals go, this is quite heavy and slightly mucus forming, but can be usefrul for those in cold climates or those new to alklaine vegan eating.
